Peer through the large window at Docklands’ Mill & Bakery and watch a master and his team at work, creating traditional European artisan breads, mouth-watering pastries and delicious sandwiches and baguettes.
Headed up by world-renowned Italian baker Alessandro Urilli, the bakery is the first of its kind in Melbourne. It features a custom-designed on-site mill, enabling Alessandro and his team to grind their own flour to use in their breads and pastries.
Starting his career as a stonemason in London, Alessandro has become a world-class artisan pastry chef. His achievements include constructing a 200kg chocolate Easter bunny for luxury department store Harrods, and stints at London’s Dorchester Hotel and Mason Blanc French Patisserie and Boulangerie.
He’s come to Melbourne from Tivoli, in his native Italy, to create his own recipes from scratch, including chocolate croissants, bombollini and his made-to-order specialised cakes.
Hidden treasures and handpicked furnishings create a homely ambience, inspired by the European countryside.
